Celeriac and potato dish with lemon

Ingredients
- 3 pieces celeriac
- 1 potato medium
- 1 carrot
- 1 onion
- 1 lemon
- salt and pepper
- olive oil extra virgin
- parsley
Instructions
- First peel celeriacs and potato and cut the into small pieces. Keep your celeriac in water with lemon so that it does not change color and potato in water for the same reason.Cut the carrot into slices.
- Cut your onion in small pieces.Add onion to your pan with olive oil and stir until it is translucent and add your celeriac and carrot and stir for a few moments until they blend .Add potato and stir a little more . Add salt and pepper and juice of 1 big lemon and hot water not too much.
- Reduce the heat and let it cook until the vegetables are soft and cooked. If needed while cooking add some more hot water.
- When it is cooked, let it rest for 20 minutes. Serve with chopped parsley on top.
