Lentil soup

This soup is one of our favourites in my country. It is versatile, creamy, flavour-packed and can be enjoyed year-around.

  • 1 pot
  • 1 blender


  • 3 cups red lentil
  • 2 cups vegetable or chicken stock
  • 4 cups hot water
  • 1 onion
  • 1 carrot
  • cumin
  • salt and pepper
  • dried mint
  • olive oil extra virgin
  • 1 lemon


  • First, rinse the red lentils well.
    Then add your chopped onions and sliced carrots into your pot with some olive oil and sautéing them for several minutes until softened and translucent.
    Add the red lentils.
  • Then add stock with hot water and bring to boil.
    Reduce to simmer and cook for 20 minutes. You can skim any foam off the top with a spoon during this time.
  • Reduce the heat and let the soup simmer until lentils are cooked and carrots are soft.
  • Then give the soup a quick taste and adjust any ingredients., add salt and the other spices and lemon and a dash of olive oil.
  • Turn off the heat and blend your soup until it becomes creamy and cozy.
    Serve with dried mint.


Try this with a slice of gluten free toasted bread and some butter on it.
