One of my go to salad.Quinoa contains high fibre&protein and is very nutritious for our body.
Quinoa salad
Equipment
- 1 baking tray
- 1 small pot
- 1 serving plat
Ingredients
- 1 glass quinoa well rinsed
- 1 small cauliflower
- 1 small broccoli
- 1 small sweet potato
- 1 buch parsley
- 2 green onions
- 2 lemon juice
- 3 tbsp olive oil essxtra virgin
- salted pepper
- turmeric
- fresh mint
Instructions
- First, add your well-rinsed quinoa into your pot and add some salt and 1,5 glasses of hot water.Bring to boil and reduce the heat and cover. Cook until there is no more water left and let it rest.
- Then wash your vegetables and cut them into small to medium pieces. Mix them with 2 tbsp of olive oil and salt and spices and put them on your baking tray. Cook at 180 degrees until tender and nicely roasted.
- Let the vegetables and quinoa cool and mix them well.
- Chop your parsley and mint and green onions finely. Add them to your salad.Season with lemon juice and olive oil and salt. Mix very well.

This is soo good and tasty and you can enjoy it for few days and take it with you to work!
