A beautiful, fresh, light and green soup is so easy to make and equally delicious.
Spinach soup
Equipment
- 1 pot
- 1 blender
Ingredients
- 1 kg spinach well rinsed
- 1 onion
- 1 potato medium sized
- 3-4 gloves garlic
- 2 cups stock ( not a must )
- salt and pepper
- turmeric
- cumin
- chilli pepper
- 2/3 cup milk - plant milk
- 2 tbsp olive oil extra virgin
Instructions
- First, chop your spinach in large pieces. Cut your onion and potato in big pieces.
- Put them in your pot and cover with your stock and/or water until you cover the vegetables.
- Simmer until the vegetables are cooked.
- Blend it until it is creamy. Add the milk, salt and pepper and spices to your taste. Last put olive oil.
